Liam Dolan Kim Dolan

Liam Dolan was elected Chair of the Board of Restaurants Canada at the association’s Annual Meeting on March 3, 2014.

Liam grew up as the middle of 10 children on a farm in County Galway, Ireland. He developed a passion for food early in life. He showed so much promise at a young age that he won a scholarship to Ireland’s Culinary Chef’s School when he was just 16.

Three years later, he immigrated to Prince Edward Island where he worked his way around the province as a chef and food and beverage manager. After noticing a lack of fresh seafood on menus on the island, Dolan opened his own restaurant, The Claddagh Oyster House, in 1983 in a then-undeveloped part of Charlottetown. Two years later, he opened the province’s first traditional Irish pub, the Olde Dublin Pub, and went on to buy Peake’s Quay Restaurant and Bar on Charlottetown’s waterfront in 1994 Under his leadership, his establishments have become crown jewels in the city’s restaurant scene.  He employs as many as 160 people during peak tourist season.

Dolan is an ambassador for PEI’s tourism industry. He famously championed PEI’s fresh seafood on talk show “Live with Regis and Kelly.” He helped found the PEI Shellfish Festival, which has grown into one of the province’s biggest tourist attractions and helped secure PEI’s position as a culinary destination.

Liam has been married to his wife and business partner, Kim, for 30 years. They have two children, Sinead and Marc, both of whom work in the family business.

Liam first joined the Board of Directors of Restaurants Canada in 2001.  As Chair, he will lead a business association representing 30,000 members in Canada’s $68-billion restaurant industry – one of Canada’s largest employers that provides career opportunities for 1.1 million people across the country. Restaurants Canada represents restaurant and foodservice businesses in all provinces and works on their behalf as a voice to government, source of cutting-edge research and partner for money-saving programs.

Marc Dolan Mitchell Jackson

Mitchell graduated from the culinary program
at Holland College in Charlottetown, Prince Edward Island in 2005.

After graduating he was employed at the Merchant Man Pub in Charlottetown.

He was then hired on as the sous chef at Dalvay-by-the-Sea -
a National Historic Site located on the north shore of Prince Edward Island.

Mitchell then traveled on to Ottawa where he was the sous-chef 
at Whalesbone Oyster House under chef Steve Wall then chef Charlotte Langely.

Mitchell returned home and again was the chef at Dalvay-by-the-sea for 2 years
where he was appointed the Executive Chef.

After a brief stint at Sims Steakhouse he was hired as the Executive Chef
for the Claddagh Oyster House and the Olde Dublin Pub.
